(Taraxacum officinale) Perennial. Dandelion is an often misconceived “weed”. Every part of the plant is edible and used medicinally. The slightly bitter leaves can be eaten fresh in salads or cooked like spinach. Roots can be roasted as a coffee substitute and the cheery fluffy yellow flowers can be sprinkled on a salad. Children take delight in blowing the round white seed heads.
Leaves and roots are a rich source of nutrients and vitamins. Needs light to germinate.
To Grow: Sow seeds indoors 4-6 weeks before your last average frost date. Press them into the soil but do not cover them with soil because they need light to germinate. Transplant seedlings outdoors as soon as the soil can be worked. Direct seed (prefered) anytime after last frost and up to 6 weeks before first fall frost. Water until established.
